Katori Chaat / Tokri Chaat | Air Fried & Deep Fried

Katori chaat is one of my favorite chaats. Whenever, we do not have papdi or puri at home and we crave for chaats, this is my go to recipe. Generally this is deep fried. Now, with air-fryer at hand, I tried making the katori in it, and they turned out great! Crispy and done with just a few drops of oil! They can also hold the moisture really well.
Katori means bowl. #KatoriChaat is a complete chaat or Indian street food served in an edible bowl. This recipe outlines how to make katori in an air fryer and in deep frying method along with a detailed video. The chaat filling is a healthy and protein rich chana or chickpeas with sweet, tangy and spicy chutneys.
Ingredients
For Dough
1 cup whole wheat flour
1 cup all purpose flour/maida
1/2 tsp salt
1 cup water
For Chaat filling
2 cups chickpeas/kabuli chana
Coriander and mint green chutney
Sweet tamarind chutney
1 finely chopped onion
1 finely chopped tomato
1/2 cup nicely whipped curd
For putting the Chaat together
1/2 cup finely chopped coriander/cilantro
1/2 cup sev
Instructions
Prep
Soak 2 cups of chickpeas/chana for 6-8 hours or overnight.If you are using canned chickpeas, you can skip this step.
Boil the chickpeas/chana for 5 whistles.
Knead the dough
Add in all ingredients of the dough into a bowl
Add water little by little and knead into a tight dough
Add 1/2 tsp oil (I used olive oil), knead it well and keep aside
Make the chaat filling
Drain the water from chana and transfer to a bowl
To that add 1 tbsp sweet tamarind chutney
Add in 1 tbsp of mint and coriander green chutney
Add 2 tbsp nicely whipped curd
Add in half of the chopped onions
Add half of the chopped tomatoes
Give it a good mix
Make the Katori/bowl
Take any steel katori/bowl, turn upside down and apply 1/4 tsp oil and spread on the whole of outer surface
Take a 2 inch small ball sized dough
Brush in little whole wheat flour and roll it
Put the rolled dough on the outer side of the katori
Tuck the dough around the katori and remove the extras with a knife
Air-Fryer Method
Place the katori upside down on the air fryer basket. Cusinart air fryer basket can fit in 4-5 at a time depending on the size of the katori.
Pre-heat the air-fryer at 350F / 180C for 5 min
Place the basket in and air fry at 350F for 10 min
Take it out of the air fryer. The katori will be hot. Let it cool a bit. Wear gloves if you find the katori hot. With the help of back of fork or spoon, remove the katori. It should come off easily
If some parts are stuck, take off the parts that are not stuck and gently separate
Place it back on the air-fryer upright to cook inside
Air-fry at 350F for 2-3 minutes
Deep-Fry Method
Heat oil in a deep frying pan and put the katori in upright. It may be helpful to prick holes with a fork on the whole outer dough of the katori to help it not to swell.
The katori will start to come off.
With the help of the tongs, remove the katori and turn it and cook well
Remove once cooked
Putting the chaat together for one serving
Take one katori/bowl
Fill it with chana filling
Add in 1 tbsp tamarind chutney
And 1 tbsp mint and coriander green chutney
Add in some whipped curd
Some chopped onion
Some chopped tomatoes
Top it off with cilantro/coriander and some sev
