Moringa Leaves Sabzi

Yet another delicious and very healthy Moringa recipe - Moringa leaves Sabzi. This is so easy to make and tastes amazing with hot pepper rasam rice or chapatis. I make this sabzi often to reap the benefits of Moringa.
Moringa is a superfood, rich in Vitamin C, Potassium, Iron, Amino acids, and many other nutrients. It is believed to prevent many diseases such as anemia and arthritis. Additionally, it provides multiple benefits for skin and hair. Including these leaves in your diet is of great benefit in all aspects.

Ingredients
2 cups or 1 bunch Moringa Leaves
3 tbsp oil
1 tsp mustard
3 dry red chili
1 tsp urad dal
1 tsp chana dal
¼ tsp Hing
1 tsp turmeric
Few curry leaves
5 -6 cloves garlic
1 medium-sized onion
1 tsp salt
¼ cup grated coconut

Preparation
Separate the Moringa leaves, taking out any big sprigs. Put the leaves in water for 15 minutes and then rinse really well.



Finely chop the garlic onion.
Making Sabzi
Warm 3 tbsp oil on low flame
Add mustard and red chili.
When mustard splutters, add hing, curry leaves, urad dal, and chana dal.
Cook until dal turns light brown.

Now add turmeric.
Add in the grated garlic and chopped onions. Turn the flame to medium and Sauté until onions are translucent.

Add the Moringa leaves, salt and mix well. Cover and cook the leaves for 10-15 minutes until the leaves are cooked. Stir frequently.


Now turn off the flame and add grated coconut. Mix in well.

Moringa leaves sabzi is ready.
Enjoy Moringa leaves sabzi with hot rasam rice or chapati.
