Poha Cutlet

Here's a delicious and healthy snack recipe: Poha cutlet filled with the goodness of millets and greens.
Poha, aka, flattened or beaten rice can be used to make crispy cutlets in less than 20min. Since poha does not need much soaking, and is ready to use, this cutlet makes a quick and easy snack. In this recipe, I have used millet poha, more specifically made of Jowar. The same recipe can be followed for regular rice poha as well, without any change.
Mint-Coriander chutney/dip/sauce goes very well with this poha cutlet.

Ingredients
For cutlet
1 cup Millet (Jowar) poha or regular poha
3 tbsp gram flour or besan or chickpea flour
2 green Chilli
2 Garlic cloves
1 inch Ginger
½ medium-sized Onion
1 cup Spinach
1 medium-sized Potato
1 tsp Red chili powder
1 tsp Cumin/Jeera powder
1 tsp Salt
1 tbsp lemon juice
3 tbsp water
Instructions
Prep
Wash all the vegetables
Boil and mash the potato.
Finely chop the onion and spinach.
Chop the green chili, garlic, and ginger.
Cutlet
Rinse the millet poha well. Drain all the water. Now, add 3 tbsp filtered water to poha and mix well. Let it soak for 10min. While it’s soaking, you can make the Mint-Coriander chutney/dip/sauce
To a blender, add chopped green chili, garlic, and ginger. Blend into a paste. Do not add any water.
Now, to that, add the poha, without any water.
Blend it further, mixing as needed in-between
Transfer all to a bowl. To that add gram flour or besan
Add in the chopped onions, chopped spinach, boiled and mashed potato
Add the spices, red chili powder, and cumin powder.
Add salt and lemon juice.
Mix everything well.
Make round shaped cutlets/patties.
Deep Fry method
Warm oil on medium flame
Deep fry the patties until golden brown.
Air-Fry Method
Pre-heat air-fryer at 350F/180C for 5min
Place the cutlets on the air-fryer basket and brush the top with little oil.
Now, air-fry at 350F/180C for 10min
Flip the cutlets, brush with little oil, and air-fry at 350F /180C for about 8-10min. After 5 min, keep an eye, so it does not burn.
Air-fried poha cutlets with just 1 tsp of oil are ready.
