Ragi Banana Chocolate Cake

Love to indulge in a no refined sugar, no all-purpose flour (aka maida), no wheat flour, eggless, low calorie chocolate cake? How is this even possible? Until you bake this - Ragi Banana Chocolate cake.
Ragi or finger millet is a miracle grain that is extremely beneficial for a great health. Finger millet is naturally gluten free. The phytochemicals found in finger millet helps in controlling blood sugar levels. Ragi is known to help alleviate stress levels and relax the body more naturally. This cereal is great source of iron and is high in calcium content that helps with strong bones.
Jaggery is a detox agent that is high in Potassium (helps in maintaining electrolyte balance), antioxidants and minerals. It also aids in digestion and is generally considered as a healthier alternative to Sugar.

Ingredients
1 cup Ragi (Finger millet) flour - nicely sieved
3 ripe Bananas. For a moist cake, use fully ripe bananas
3 tbsp Cocoa powder
1/2 cup Milk
1/2 cup Olive oil (or any type of cooking oil)
1/2 cup Jaggery
1 tsp Vanilla essence
1/2 tsp baking powder
1/2 tsp baking soda
4 tbsp Walnuts or nuts of your liking (optional, but recommended)
4 tbsp Chocolate chips (Optional)
1 cup = about 125 g
Instructions
Preheat the oven to 350F (or 180C). Put parchment paper on a 9" cake pan and set aside
Take a deep mixing bowl
Peel 3 ripe bananas and add to the bowl
Mash them well using a hand mixer (use a fork if you don't have one)
Add all the wet ingredients - 1/2 cup milk, 1/2 cup olive oil and 1 tsp vanilla essence. Whisk thoroughly
Now to the batter, add all the dry ingredients - 3 tbsp cocoa powder, 1 cup ragi flour, 1/2 cup jaggery, baking powder and baking soda. Mix well so there are no lumps
Add walnuts (or your preferred choice of nuts) and give it a gentle whisk. Pour and spread the semi-thick batter into the cake pan
If you love chocolate chips, you can add some.
Conventional Baking
Bake for 35 minutes or until done. Tooth pick inserted in the center of the cake comes out clean without any batter
Take out the pan and let it cool until not hot enough to touch - so you are able to easily transfer it without risk of burning your hands
Now, Transfer the cake to a cooling rack and allow it to sit for 10-15 mins
Ragi cake is very soft. So, let the cake cool completely before cutting it.
Tips
Keep the cake in the drawer underneath the oven if you'd like to enjoy it warm.
