Instant Ragi Dosa | Finger Millet Recipe

I don't have to feel guilty since this dish is light, healthy, and nutritious, and that I can sneak in some millets in my kid's diets. I arrived at this instant ragi dosa recipe after trying several variations of the proportion of the ingredients. This recipe gives the best texture of instant ragi dosa and so easy to make. Just mix the ingredients and there you have got the batter for a nutritious and tasty dosa! Do check the video to get a feel of the consistency of the batter.
Ingredients
For Batter
1 cup Ragi flour
1/4 cup Rice flour
1/4 cup Upma Rava (aka Semolina or Sooji)
1/4 cup chopped Onion or 1 Small Onion
1 tsp Cumin seeds/Jeera
2-3 Green Chili
2 Tbsp Coriander Leaves
4- 5 Curry Leaves
1 tsp Salt
3 cups water

Prep
Finely chop the onion, coriander leaves, curry leaves, and green chili.
Making the batter
For the batter, Take a bowl and add Ragi Flour, Rice flour, and Rava
To this add the chopped onions, cumin seeds, finely chopped green chili, coriander leaves, curry leaves, and salt. Mix it well
Now, add 2 cups of water and make a runny batter. Mix it thoroughly so that it does not have any lumps.
Add the remaining 1 cup water and mix it well for a thin and a runny consistency
Ragi dosa batter is ready.
At any point, if the batter feels thicker, add 1/4 cups of water.

Making the dosa
Place a tava/girdle on medium flame and wait for it to get hot
The pouring of this dosa is a little different than conventional dosa
The batter is runny. So it is poured on the girdle in a circular motion and left to settle. Fill in the big gaps by pouring extra batter as needed. Please check the video.


Spread half tsp oil around and some in the gaps and cook for about 1 min. The edges will separate.
Flip and cook for about 15-30 sec or until done.

Enjoy this hot dosa with coconut or peanut chutney! Spicy chutney adds more taste and flavor.
