Instant Ragi Roti | Ragi Rotti | Finger Millet Recipe

Ragi or Finger Millet is a highly nutritious food that is rich in Protein, Iron and Calcium. This is an instant recipe made with Ragi flour with loads of veggies making it an extremely healthy and delicious dish. Include Ragi in your diet to get some vegan calcium. This can be made for breakfast or dinner.


We love to include millets in our daily diet in every possible way because of its immense health benefits. Ragi is one such millet from my hometown that I have really enjoyed in the form of various dishes since my childhood. I want to include it in my family's diet to keep the tradition going.



Ingredients

  • 2 cups Ragi Flour

  • ½ cup Cabbage

  • ½ cup Onion

  • ¼ cup Carrot

  • 2 Green Chilli

  • 3 garlic cloves

  • Handful Dill leaves (aka Subsige soppu)

  • Handful Cilantro (aka Coriander leaves)

  • 1 tsp Cumin seeds/Jeera

  • 1 tsp Salt

  • 1 cup Buttermilk

  • About 1/3 cup water (or as needed)

  • Cooking Oil as needed

1 cup = about 128g



Instructions


Prep Time: 20 mins        Cook Time: 5 mins        Servings: 6-8
  • Take a deep mixing bowl and add Ragi Flour

  • To that, add all the veggies

  • Blend green chilli and garlic cloves into a paste

  • Add this paste along with cumin seeds and salt to the mix

  • Add buttermilk

  • Now slowly add water little by little and mix well and make a paste like batter

  • The batter should not be runny. You should be able to pick a handful. Watch the youtube video for the consistency of the batter

  • Take a handful of batter and put it on a cool tava or girdle

  • Wet your hands and spread the batter on the tava gently in a circular motion to a thin roti

  • Make a hole in the middle. This holes helps in getting a good crispiness to the rotti.

  • On a medium flame, place the tava. Now, add 1/2 tsp oil all around and in the middle of the rotti

  • Cover and cook for about 2 -3 mins

  • Flip over and cook for another 1-2 mins

  • Serve hot with your favorite chutney. I love Ragi Rotti with Ridgegourd peel chutney. Also goes well with Coconut chutney or Peanut chutney.

Important Note: Cool the tava before spreading the batter or Use 2 tavas. Running hot tava under a cold stream of water helps cool it down faster.
