Set Dosa | Karnataka Special | Soft and Spongy

Set dosa is a very famous Karnataka dish that is soft and spongy dosa served as set of three dosas. This set of 3 dosas with Vegetable Sagu makes a delicious and satisfying breakfast. The speciality of this dosa is that, just after pouring the batter on tava, many holes or pores appear on the dosa. More the number holes, the more spongy and porous the dosa is. The dosa texture is very very soft.
Sagu, a coconut based preparation with special spices and lots of vegetable, is a side dish that goes really well with this dosa. Poori tastes great with Sagu too. Give it a shot and you will fall in love.
This mouthwatering dosa is so soft and spongy that when smeared with ghee or butter, just melts in mouth.


In this post, I share my secret formula of making the softest, spongiest and fluffiest Set Dosa ever. I arrived at this recipe after many trials over the years, of various proportions of the ingredients, to get the right texture of set dosa.

Ingredients
1 cup Idli Rice
1 cup Raw Rice/Sona Masoori Rice
½ cup Urad Dal
½ cup Sabudana
1 cup Poha or Beaten rice
1 tsp Methi/Fenugreek seeds
2 tsp Salt
4½ cup water for soaking and 3 cups water for grinding

Take Idli Rice in a Bowl.

To that add Raw rice or Sona Masoori Rice

Now, add Urad dal , Poha and Methi.


Rinse it well.
Add 4 cups water.

Take 1/2 cup Sabudana or Tapioca Pearls in a separate bowl.

Add 1/3 cup water to Sabudana. Mix well. Do not add more water as it will become sticky.
Soak both for 5-6 hours.

Make the batter
Drain all the water from Rice and Urad mix. Add it to the grinder or blender.
Sabudana would have soaked all the water. Add it along with Rice/Urad.
Add 1/2 cup water.
Grind for 40 mins or blend until smooth adding water in intervals as needed. Total water needed is 3 cups.


Correct consistency
Transfer to a deep bowl.
Add salt and mix well with hand
Cover and keep in warm place for fermentation for 8 hours or overnight

After 8 hours. Batter has nicely fermented.

Mix the batter well.
Making Dosa
Warm tawa on medium flame. If using cast iron tawa, season it with oil.
Pour 1 1/2 ladle of batter.
Spread it slightly. This dosa should be spread thick.
Many holes with appear. This makes the dosa spongy and porous.
Cover and cook for about 30 sec.
Then flip and cook for about 30 sec.
Soft and spongy set dosa is ready.


Enjoy Set dosa with Sagu and coconut chutney.
